Parmesan & Sausage Egg Salad |

I’m sure you’ve never encountered an egg salad
recipe quite like this one. With my family enjoying the bacon
recipe, I decided that adding other favorite ingredients (traditionally
enjoyed with eggs) could be the way to ‘sell’
more egg salad. This recipe was born out of that inspiration.
Plus, my husband said, “Maybe this recipe would taste
good with sausage too instead of bacon” so here we are.
A little extra parmesan cheese can also be used as a garnish
on top, particularly if you are serving this on a lettuce
or spinach salad.

Hard-boiled Eggs, peeled and chopped
5 links Breakfast Sausage (about 3/4 cup), cooked and chopped
1/3 cup Light Mayonnaise
2 tablespoons Sweet White Onion (vidalia is nice), finely
minced
2 Celery Stalks (no end or leaves), finely chopped
1 tablespoon Parmesan Cheese, grated
1 teaspoon Lemon Juice (freshly squeezed if possible)
½ teaspoon Prepared Yellow Mustard
To taste: Salt & Freshly Ground Black Pepper (about 1/8
to 1/4 tsp of each)
Instructions:
In a medium bowl, mix the eggs, celery, onion, sausage, mayonnaise,
parmesan cheese and lemon juice. Season to taste with salt
& the ground black pepper.
Chill for one hour before serving to help the flavors combine.
